Blue Agave takes years to mature
Tequila is made from the Blue Weber Agave plant. Unlike most crops, blue agave requires patience—it typically takes 6 to 10 years to fully mature before it is ready to harvest. Farmers keep tabs on the plants in their growth and keep them sugar-rich to get the highest amount of sugar.
It Has Ancient Roots
Before modern tequila was created, indigenous communities in Mexico had developed a fermented agave beverage known as pulque. With the introduction of Spanish distillation techniques in the 16th century, tequila became the spirit we know today.
Different Ageing Creates Different Flavours
Tequila comes in several types based on the ageing process:
- Blanco (Silver): Bottled immediately or shortly after distillation to give fresh agave flavours.
- Reposado: Aged in oak barrels for 2 to 12 months, and the notes are more smooth and complex.
- Añejo: Aged for 1 to 3 years, and much richer and more complex flavors are formed.
- Extra Añejo: Aged for more than three years, often compared to premium whisky or cognac.

The harvesting of agave is carried out by experienced jimadores, who use a specialized tool called a coa to remove the leaves and get the heart of the agave, called piña. This traditional craft has been passed down over generations.
